Salmon burgers are easy to make and barbeque well. The recipe gives some variety to the usual methods that you might prepare salmon. Try cooking it with mustard and brown sugar or Worcestershire sauce on top for kick.
To make salmon burgers, start with a whole salmon or a salmon fillet. Wash the fish and then prepare into fillets. Remove the skin and remove all the bones. Use a pair of pliers to remove the pin bones, or, cut out this piece and discard.
Once the fillets are boneless cut into small cubes approx 1cm x 1cm or slightly smaller. The cubes will be mashed to form the salmon burger patties.
Place all the salmon cubes into a mixing bowl.
Add in some ground pork at an approximate ratio of 5 salmon : 1 ground pork. The ground pork will help the salmon burgers to hold together and give some additional moistness and flavour.
With the salmon and pork together in the mixing bowl, mix this up and then form into salmon burger patties.
Add salt and pepper.
Give the salmon burger patties a light brushing of vegetable oil to help them not to stick, and barbeque on medium heat.
You can add different spices to the salmon burgers when they are cooking on the barbeque, such as salt and pepper, hot sauce or chilli flakes, Worcestershire sauce, cheese, etc. While its cooking I like to add a combination of mustard and brown sugar, or, Worcestershire sauce.
Leftover salmon burgers can be reheated briefly in a microwave and work well that way. Salmon burgers can also be broken up and used in wraps, soups, or in salmon salads for fast and easy meals.
